Garlic & Chili Prawns
500g shelled-deveined prawns
10ml sesame oil
10ml olive oil
3 garlic cloves
1 teaspoon ginger
2 red or green chilies
1 spring onion, green part
sprig of fresh coriander
salt to taste
Combine sesame and olive oil and heat in a large wok
Add prawns and stir-fry until they are pink (1-2 minutes) Remove from wok
Reheat remaining oil and stir in chopped garlic, ginger and chillies
Return prawns to the wok, add sliced spring onion, coriander and salt
Cook for another 1-2 minutes, then transfer to platter and serve
