Breadcrumbs

Breadcrumbs are a common inclusion in food preparations and often act as a binding agent and create a crisp coating.
 
White - soft breadcrumbs can be made at home. Remove crust from 2 days old bread, brake into pieces, place in food processor and process until fine.
 
Dry Breadcrumbs; Place slices of 2 days old bread on baking tray in oven at the lowest temperature setting. Dry for 1 hour, break into pieces and process in blender until fine.
 
Fried Breadcrumbs; Heat 120g clarified butter in a frying-pan and add 50g white breadcrumbs. Stir continuously on low temperature until an even golden brown. Drain and use as required.
