Basic method for pancake

Ingredients:

  • 500g soft flour
  • salt, pinch
  • sugar, pinch
  • 2 eggs
  • 1 litre milk
  • 1 tablespoon oil for batter
  • oil for frying
 
Pancakes
Method:
  1. Combine flour sugar, salt, eggs, milk and oil.
  2. Whisk continuously to smooth batter - allow to rest for 1 hour.
  3. Heat the pancake pan, add 1/2 tablespoon oil and reheat until very hot.
  4. Add batter to coat the bottom of the pan and cook until brown on both sides.
  5. Continue making the pancakes placing them on top of each other to prevent drying.
 
Pancakes with herbs: Prepare pancakes as basic method (adding 2 tablespoons chopped fines herbs to the finished batter).
