Egg Dishes: Boiled Eggs

 

Boiled eggs served in the shell are a popular breakfast dish. Egg need to be fresh as posible and should be kept at room temperature for at least 1 hour before bolilng.

  • place the eggs into frying-basket and then into a pan of boling water
  • simmer gently 3-5 minutes for lightly-soft-biled and 10 minutes for hard-boiled (overcook eggs will result in a greyish-blue covering to the yolks)
  • remove the basket of eggs and place under running cold water
  • shell them quickly and reserve for use

Mixed Fresh Salad & Eggs

Ingredients

Salad:
200g mixed salad leaves
2 large hard boiled eggs
1 avocado
olives

Dressing:
2 tbsp lemon juice
1 tbsp olive oil
salt


Method:

Peal the hard boiled eggs, and cut into thick slices.

Cut the avocado in half, remove the stone and skin and slice.

In a large bowl combine salad leaves and salad dressing.

Top with eggs, olives and avocado slices.
