Egg Dishes: Scrambled Eggs & Mushrooms

Ingredients:

  • 20g butter
  • 1/2 cup mushrooms
  • 2 tablespoons diced ham
  • 2 eggs
  • salt & pepper
  • 1 tablespoon plain flour
  • 2 tablespoons milk
  • fresh parsley
  1. Clean and trim mushrooms into thin slices.
  2. Heat oil in shallow frying pan and saute mushrooms over medium heat, until they begin to brown and liquid has evaporated.
  3. Add finely diced ham and saute 3 minutes more.
  4. Beat the eggs, add flour and milk and pour over mushrooms and ham mixture.
  5. Cook stirring continuously with a wooden spoon until the eggs just cooked.
  6. Sprinkle with chopped parsley and serve immediately.
