Egg Dishes: Scrambled Eggs & Mushrooms |
Ingredients:
- 20g butter
- 1/2 cup mushrooms
- 2 tablespoons diced ham
- 2 eggs
- salt & pepper
- 1 tablespoon plain flour
- 2 tablespoons milk
- fresh parsley

- Clean and trim mushrooms into thin slices.
- Heat oil in shallow frying pan and saute mushrooms over medium heat, until they begin to brown and liquid has evaporated.
- Add finely diced ham and saute 3 minutes more.
- Beat the eggs, add flour and milk and pour over mushrooms and ham mixture.
- Cook stirring continuously with a wooden spoon until the eggs just cooked.
- Sprinkle with chopped parsley and serve immediately.
