Dory Fillets are a white meat, fresh water fish from the catfish family.
There are many ways to cook them of course but some of the more well known dishes are Cream Dory, bear battered and steamed Dory fillets.
Here is a simple recipe for Dory fillets.
What you need.
Freshly chopped Dill
Firstly, combine the olive oil, lemon juice, salt, and freshly chopped dill in a bowl making sure the mixture is well blended together.
Next, rub the marinade onto your fish fillets and put in the fridge for around 20 minutes to infuse the flavours.
Now heat the butter into a frying pan untill melted and sizzling.
Next drain the fillets and roll quickly in flour to give a thin coating all over. Then shallow fry for approximatley five minutes on each side of the fish.
Serve with a nice mixed salad or chips. You could even add a tartar sauce side dish dip.
