Dory Goujons |

- 200g dory fillets
- lemon juice
- salt
- 2 eggs
- 50ml water
- 50g flour
- bread crumbs
- oil for deep frying

- Slice each skinless fillet lengthwise into 3-4 wide strips.
- Combine with fresh lemon juice and season with salt.
- Whisk eggs, flour and water.
- Dip fish in egg mixture then breadcrumbs and deep fry until golden brown.
- Drain on paper towel. Serve with lemon wedges.
