- Heat oil in a frying pan, add garlic, chopped chilli, and stir-fry over medium heat until aromatic.
- Add prawns and stir-fry until they change colour (4-5 min).
- Add tomatoes, salt, sugar and stir-fry for 2min.
- Remove from heat, add basil leaves and toss through.
- Serve with hot polenta.
Polenta:
Bring a pen of salted water to the boil. Stir in polenta and cook for 20 minutes.Remove from heat and stir in basil, garlic, parmesan and butter, mix until butter melts.

- 500ml water
- 1 teaspoon salt
- 1 tablespoon finely chopped basil leaves
- 2 cloves finely chopped garlic
- 2 tablespoons freshly grated parmesan cheese
