Italian Prawns

Prawns & Polenta

 

  • 2 tablespoons oil
  • 2 cloves garlic
  • 1/2 small red chilli
  • 300g fresh peeled prawns
  • 200g crushed tomatoes
  • fresh basil leaves
  • pinch of sugar
  • salt to taste
Method:
  1. Heat oil in a frying pan, add garlic, chopped chilli, and stir-fry over medium heat until aromatic.
  2. Add prawns and stir-fry until they change colour (4-5 min).
  3. Add tomatoes, salt, sugar and stir-fry for 2min.
  4. Remove from heat, add basil leaves and toss through.
  5. Serve with hot polenta.
Polenta:

Bring a pen of salted water to the boil. Stir in polenta and cook for 20 minutes.Remove from heat and stir in basil, garlic, parmesan and butter, mix until butter melts.

  • 500ml water
  • 1 teaspoon salt
  • 1 tablespoon finely chopped basil leaves
  • 2 cloves finely chopped garlic
  • 2 tablespoons freshly grated parmesan cheese
  • 30g butter
