Bolognese Sauce |

- 400g minced beef
- 150g streaky bacon
- 20ml olive oil
- 2 cloves garlic
- 1 onion, chopped
- 1 stick celery, chopped
- 1 tbsp tomato pure
- 2dl red wine
- 5dl beef stock
- 40g grated parmesan

- Heat the oil add bacon, onions, celery and garlic and cook without colour.
- Add beef, season with salt and pepper and cook until lightly coloured, mixing frequently.
- Add to the pan tomato pure, wine, and stock. Mix together, bring to the boil and simmer gently for one hour.
- Adjust the seasoning as necessary. Serve on hot plate with pasta of you choice and grated parmesan.
