 Chicken Salad

 

 

 

 

 

Ingredients:

  • 200gm chicken breasts
  • salt and pepper
  • 40g butter
  • 300gm chinese cabbage
  • 50gm roasted peanuts
  • 1 tbsp mint
  • 1 tbsp coriander
  • 1 red chilli
  • 20ml lime juice
  • 50ml fish sauce dressing
Chicken Shreded Salad
 

Fish sauce dressing:

  • 40mls fish sauce (nuoc mam)
  • 40mls water,
  • 10 mls vinegar
  • 2 tbsp sugar
  • 2 cloves garlic, finely chopped
  • 30g red chilli, finely chopped

Method:

  1. Season chicken with salt and pepper.
  2. Melt butter in large frying pan.
  3. Add chicken breasts and cook over low heat 4-5 minutes on each side.
  4. Allow to cool and cut into strips.
  5. Shred chinese cabbage and combine with salt and lime juice.
  6. Shred mint, chilli and coriander and combine with cabbage.
  7. Toss through fish sauce dressing.
  8. Top the salad with chicken meat and sprinkle with chopped peanuts.
