Pork Kebabs

Ingredients for Pork Kebabs:
- 250g pork fillets
- 100g red capsicum
- 100g eggplant
- 100g onion
- 100g smoked bacon
Marinade:
- 60ml vegetable oil
- 2 teaspoons salt
- 1 teaspoon balsamic vinegar
- 1 teaspoon soy sauce
- 1 teaspoon hot chilli sauce

Method:
- Combine all ingredients for marinade.
- Cut meat, capsicum, onion, eggplant and bacon into triangular bite sized pieces.
- Place all ingredients in suitable dish and combine well with marinade. Refrigerate for 1 hour.
- Thread alternately meat, capsicum, onion, eggplant and bacon onto wooden skewers. ( Make 6 )
- Cook the kebabs on a hot lightly oiled barbecue grill for 12 minutes turning occasionally.
