Mustard Chicken
- Skinless, boneless chicken breasts
- Marinade: olive oil, Dijon mustard, lemon juice
- Coating: plain flour seasoned with salt and pepper
- For Frying: butter & oil

| Combine olive oil, Dijon mustard, lemon juice and salt. Add chicken and marinate for 30 minutes. Remove chicken from marinade and coat in plain flour seasoned with salt and pepper. Cook 6 to 8 minutes on each side. |
