Pasta Marinara with green curry paste and fresh basil
Ingredients:
500gm egg pasta (or bellini spaghettini )
60ml olive oil
100g onion - diced
2 garlic cloves - crushed
2 red chillies
1/4 cup fresh basil - roughly chopped
2 tablespoons green curry paste
600gm frozen marinara mix (mussel, squid, baby clam meat, baby prawns)
Method:
1. Cook pasta in large pot of boiling water approximately 4 min, until it is al dente
2. Heat the oil in a large pan, add diced onion - cook until translucent
3. Add frozen marinara mix, garlic, chilli and curry paste
4. Mix and turn with a wooden spoon. Turn the heat up to a light sizzle, and allow to boil and reduce slightly. Add fresh basil.
5. Drain pasta and toss through sauce. (Serves 2)
