Gnocchi |

Ingredients:
- 280 g plain flour
- 200 g beef
- 2 eggs
- 1kg even sized old potatoes
- salt
- 70 g butter
- parmesan

Method:
- Cook potatoes in their skins for 20-30min (depending on size). Drain and peel off the skins.
- Push the potatoes through a sieve, add eggs and softened butter and salt. Mix thoroughly and knead until soft, adding more flour if necessary. Using tablespoon shape gnocchi and drop them into boil water. Cook for 5 minutes.
- Remove cooked gnocchi with a slotted spoon and toss in sauce, and sprinkle with Parmesan cheese. Serves 4
Tomato sauce:
- 1 onion, finely chopped
- 1 garlic clove, crushed
- 200 g diced beef
- 20 ml olive oil
- 400 g ripe tomatoes
- 20 ml tomato puree
- 150 ml stock or water
- 1 sprig of fresh basil leaves, torn
- salt & pepper
Heat the oil in a saucepan, add the onion and cook until softened. Add maet and cook for 10 min. Add roughly chopped tomatoes and garlic, cook for another 10 min. Add stock, tomato puree, basil, salt & pepper to taste. Simmer for 1 hour.
