Potato Recipes: Pommes duchesse

  • 1kg potatoes
  • 50g butter
  • 3 egg yolks
  • salt
  • nutmeg
  1. Cook the potatoes in a pan of boiling salted water for 20 minutes.
  2. Drain well and mash.
  3. Add egg yolks, butter salt and nutmeg.
  4. Mix thoroughly with a wooden spatule over moderate heat.
