2 medium sized potatoes
1 tbls natural yoghurt
60 gms small lardons of bacon
4 cloves garlic
fresh chives
seasoning to taste

- Wash, peel potatoes and cut into small dice.
- Bring water to the boil, add garlic and salt.
- Add potatoes and cook until tender.
- Drain well, place into dish and season with salt and pepper.
- Fry bacon until its crisp and drain.
- Mix the bacon into the potatoes fold through the yoghurt and some chopped chives. Serve cold.
