Potato Recipes:
Potato Salad with Yoghurt
2 medium sized potatoes
1 tbls natural yoghurt
60 gms small lardons of bacon
4 cloves garlic
fresh chives
seasoning to taste
Wash, peel potatoes and cut into small dice.
Bring water to the boil, add garlic and salt.
Add potatoes and cook until tender.
Drain well, place into dish and season with salt and pepper.
Fry bacon until its crisp and drain.
Mix the bacon into the potatoes fold through the yoghurt and some chopped chives. Serve cold.
