Wash, peel and cut potatoes into evenly sized pieces.
Peel and finely dice onion and slice sausages.
Heat oil in large saucepan, add onion and sauté until soft.
Add potato, sausages, paprika, oregano and pepper and stir until coat.
Add hot water just enough to cover potatoes, bring to the boil. Add bay leaf, stock powder, and parsley.
Reduce heat and simmer gently, stirring occasionally, until most liquid has evaporated. Allow potatoes to fall apart, it will give soup-thickened consistency.
During cooking add extra hot water if necessary.
