Potato Recipes: Rich Potato Cakes

Potato cakes, dill, parsley, parmesan...
  • 500g mash potatoes
  • 25g butter
  • 2 eggs
  • 150g plain flour
  • 1 tbsp chopped dill
  • 1 tbsp salt
  • 1/2 tbsp black pepper
  • 20g grated parmesan cheese
 
  • Wash and peel potatoes, cook, drain well and mash.
  • Stir the butter into the mashed potato and mix in beaten eggs.
  • Sift the flour over the potato mixture, then mix it in well.
  • Season with plenty of salt and pepper.
  • Add chopped dill and shape into rounds (50g), then flatten sligtly.
  • Place doughnuts on a lightly oiled baking tray and brush with melted butter.
  • Sprinkle the tops with grated parmesan cheese and breadcrumbs.
  • Bake in preheat oven to 180'C, for 30 minutes until browned.
