Salad Recipes: Nicoise Salad

Ingredients:

  • 100g lettuce
  • 50g cooked french beans
  • 100 g cooked potatoes
  • 100 tomatoes
  • 50g anchovy fillets
  • 50g black olives
  • 20g capers
  • dressing
Dressing:
  • 30ml oil from anchovy fillets can
  • 20ml vinegar
  • 2 garlic cloves finely chopped
  • 1 teaspoon salt
Nicoise salad
Method:
  1. Place french beans in boiling water and cook for 3 minutes.
  2. Refresh in cold water and drain.
  3. Place potatoes in cold water, bring to the boil and cook for 20 minutes (depending of the size). Drain, peel and slice thick.
  4. Combine and mix well all ingredients for dressing.
  5. Cut lettuce raughly and place in a salad bowl. Garnish with cooked french beans, potatoes slices, tomatoes, anchovy fillets, black olives and capers.
  6. Sprinkle with salad dressing. Serve cold.
