Dill Sauce |
Ingredients:
- 25g butter
- 25g plain flour
- 1 tbsp chopped fresh dill
- 1/2 tsp sea salt
- 1 tbsp lemon juice or white vinegar
- 25ml thickened cream
- 200ml water (or stock)

Method:
- Prepare white roux using butter and flour.
- Add chopped dill and cook for few seconds.
- Gradually mix 200ml water (or stock) into the roux.
- Simmer gently for 10 minutes stirring frequently to prevent sticking.
- Season with salt, and add cream.
- Remove from the heat, add lemon juice and serve with fish and potatoes.
