Sauces:

Dill Sauce

Ingredients:

  • 25g butter
  • 25g plain flour
  • 1 tbsp chopped fresh dill
  • 1/2 tsp sea salt
  • 1 tbsp lemon juice or white vinegar
  • 25ml thickened cream
  • 200ml water (or stock)
Method:
  1. Prepare white roux using butter and flour.
  2. Add chopped dill and cook for few seconds.
  3. Gradually mix 200ml water (or stock) into the roux.
  4. Simmer gently for 10 minutes stirring frequently to prevent sticking.
  5. Season with salt, and add cream.
  6. Remove from the heat, add lemon juice and serve with fish and potatoes.
