Sauces:

Tomato Sauce

 

Ingredients:

  • 25g butter
  • 20g plain flour
  • 20 g tomato paste
  • salt to taste
  • 200ml water or stock
Method:
  1. Melt butter and add flour.
  2. Cook gently to sandy texture, without colour, stirring frequently.
  3. Add tomato paste, salt and water or stock.
  4. Reduce to simmer for 10-15 minutes stirring frequently.
  5. Strain and use as required.
