Ingredients:
barbecue chicken, shredded
spring roll pastry sheets
shallots, finely chopped
ginger, finely chopped
cabbage, shredded
bean-sprouts
carrots, grated
garlic, crushed
soy sauce
oil
Dipping sauce:
1 tablespoon crushed peanuts
1 tablespoon sweet chilli sauce
1 teaspoon light soy sauce
1 garlic clove, crushed
1 tablespoon vinegar
1 teaspoon sugar
Method:
Heat little oil - add prepared vegetables - stir fry for few minutes - add soy sauce
On each pastry sheet, place tablespoon meat and tablespoon of the vegetable mix
Roll each spring roll and place on oven tray
Bake in a hot oven – 200C for 30 min. until pastry is golden brown
Make dipping sauce: mix all ingredients and serve with spring rolls
