Vegetable Recipes: Vegetables with Polenta

  • eggplant
  • onion
  • capsicum
  • zucchini
  • olive oil
  • parsley
  • garlic
  • tomato sauce
  • salt
  • polenta
  • parmesan cheese
 
  1. Cut vegetables into slices.
  2. Heat oil and cook vegetables until browned.
  3. Season with salt and add tomato sauce and parsley.
  4. Cook polenta according to packet directions. Add parmesan cheese.
  5. Serve with vegetale sauce.
