Zucchini cakes recipes

Zucchini is a vegetable that you can cook fast, easy and delightful. As summer approaches you can have zucchini in many ways. Zucchini cake is easy and can be cooked as fast as 5 minutes. Children would like it even they think they would not like to eat vegetable. Or fritters that comes with the combination of zucchini, carrots and onions in a great taste. Fried Zucchini cakes recipe

1/3 cup biscuit (pretty basic if low fat)
1/4 cup shredded american or cheddar cheese
1/8 table spoon salt
1/8 table spoon pepper
2 beaten eggs
2 cups zucchini (grated)
2 table spoon butter

1. Combine biscuit, cheese, salt and pepper in a bowl.
2. Add the beaten eggs and zucchini on the bowl and shape when well mixed.
3. Melt butter in a skillet and add the shaped patties.

Zucchini fritters recipe

2 grated zucchini (medium)
1 table spoon salt
1 grated carrot
2 table spoon onion (minced)
2 table spoon parsley (minced)
1/2 cup all-purpose flour
ground black pepper (dash or fresh)
canola or olive oil

1. Mix zucchini and salt in a colander and let it drained for 15 minutes.
2. Mix well the well drained zucchini with carrot, onion, parsley flour and pepper.
3. Fry zucchini by table spoon (full) on a hot pot with 1/2 inch of heated oil.

Beef and Zucchini Skillet

1 lb lean ground beef
1/2 chopped medium onion
2 small, seeded and chopped hot peppers
1 large peeled, cubed and diced zucchini
2 large diced
2 sliced carrots
1 can V-8 Juice, small

1. Cook ground beef, onion and peppers in a large skillet until meat has no pink color and pepper is soft and put the mixture in a colander to drain.
2. When drained wipe the mixture with a paper towel and return the mixture in the skillet.
3. Pour the juice and add the carrots on the mixture.
4. Simmer the mixture in a boil and lowered heat.
5. When zucchini, carrots and tomatoes start to get soft simmer vegetables until it gets tender.

Zucchini cakes recipe
Zucchini Cakes
  • 400g grated zucchini
  • 100g white bread crumbs
  • 1 egg
  • fresh mints
  • 1 garlic clove
  • 1 teaspoon salt
  • pinch pepper
  • 60ml oil
  1. Combine bread crumbs, egg yolk, minced garlic, chopped mints and zucchini.
  2. Season with salt & pepper to taste.
  3. Shallow fry spoonfuls of mixture, a few at a time until golden in colour.
